Ratatouille is a well known vegetable stew recipe from Nice, in Provence region, that is truly delicious! The first records of it date back from the late 18th century. The word ‘ratatouille’ is thought to come from the French word 'rata', which was military slang for a quick and easy-to-prepare dish for soldiers. Since, ratatouille has become one of the most popular recipes in France, and even the entire world after our little rat friend Rémi brought it to celebrity! But actually, what Rémi cooks at the end of the movie is what we would call a Tian provencal in France, a slightly more elaborate version of the same dish. Traditional ratatouille is very easy to cook, cheap to prepare, and can be eaten either hot or cold. It is perfect with rice and with meat, particularly lamb.

 Preparation: 15 minutes

Cooking time: 45 minutes


Ingredients (for 4 people):

3 courgettes (zucchini)

2 aubergine (eggplant)

1 green pepper

1 red pepper

1 yellow pepper

4 ripe tomatoes

2 onions

3 cloves of garlic

Salt and pepper

Olive oil

Thyme, laurel leaves

Rinse your vegetables.

Remove the seeds from the peppers and cut them into small pieces.

Cut your aubergines and tomatoes into cubes, and your courgettes into slices.

Slice your onions into thin straps and chop your garlic.

Pour four spoons of olive oil in a casserole and put on medium heat. Once the oil is hot, you can add in the onions and the peppers. 2 or 3 minutes later, add in the cubes of aubergine. Stir for a couple of minutes and then add the courgettes to the mix. Put on the lid of the casserole, turn down to low heat, and cook for 30 minutes.

Half an hour later, you can finally add the tomatoes, some salt and pepper, the thyme and laurel leaves and the chopped garlic. Stir and cook for 15 minutes without putting the lid back on.
